The cuisine of Vertigo rests upon the principle: less is more. The food offered originates in Italian and French cuisines, but more in terms of application of technologies than that of national cuisines. Fresh and seasonal raw materials are used in abundance. This is the Vertigoesque version of modern Estonian cuisine. Vertigo is all about consistent development, and touches of everything new can be encountered in the every aspect. Although it is already two years since the opening, one can not but feel that Vertigo has always been there.
