HOW HAVE THE RESTAURANTS BEEN RANKED?

The top 50 restaurants have been ranked on the basis of the opinions of key employees in Estonian restaurants. Restaurant managers, chefs and sommeliers each individually listed the five best restaurants of their choice. The employees of each restaurant listed as the best restaurants by any of the evaluators were given a chance to express their opinions as well. The top 50 restaurants in Estonia represent the aggregate of all the opinions involved.

Though simple, the method is very effective. Restaurants keep a close eye on the activities of each other. Any change for the better or worse is pinpointed well before it becomes obvious for clients.

Also, the ranking is highly democratic. The best does not stand only for the priciest haute gastronomy, but for the recognition by colleagues and competitors that depends neither on the type of the eating place nor the underlying business model. Only the crème de la crème gets the limelight.
 
50 is just a small number. The list of good restaurants in Estonia could be considerably longer. We would like to offer the very best, not all of the good restaurants we have.

Seto tsäimaja (teahouse) – a foreign country within Estonia

Every Estonian must strain one’s eyes and rack one’s brain while reading the menu in the Seto dialect on the wall of the teahouse. Still, some things remain unclear. As for the food, it also has a taste of local dialects, yet the language of taste is universal. For all nations.

Tsäimaja or teahouse is an eating place within a small open air museum. The museum introduces the heritage and life-style of Setos. So does Tsäimaja. One could only wish for more museums like this where the food would be part of the heritage introduced. Not just coffee, cake and coca-cola.   

While the farm buildings and the yard are just silent and do not tell any stories, the food kindly conveys everything in its own language. It makes more sense to look around in the museum after tasting soup, porridge and cheese, not the other way round.
